This delicious cake recipe with lemon essential oil brings a fresh, light touch to the table on warm days when the air is filled with the scent of sunshine and sweets.
RECIPE200 g margarine
200 g granulated sugar
1 package vanilla sugar
1 organic lemon for zest and juice
6 drops of lemon essential oil
4 medium eggs
200 g spelt flour
50 g cornstarch
2 tsp baking powder
A pinch of salt
Grease the cake pan and preheat the oven to 180°C (350°F) with top and bottom heat. Cream together the margarine, sugar, vanilla sugar, lemon zest, and a pinch of salt. Stir in the eggs one at a time. Add the lemon juice and 6 drops of lemon essential oil. Mix the flour, cornstarch, and baking powder, then stir into the batter. Pour the batter into the cake pan and bake in the preheated oven for about 50 minutes. Let the cake cool, then turn it out of the pan.
