Litsea Cubeba, also known as May Chang or Chinese Pepper, is a popular spice in the Chinese kitchen. The zappy oil with its citrus-like fragrance is steam-distilled from the fresh, peppercorn-like fruits of the evergreen Litsea tree. Traditional Chinese medicine used Litsea Cubeba to treat various gastrointestinal disorders, in the cold season and for muscle and joint complaints. According to TCM, Litsea is able to dissolve heat conditions and can thus relieve agonising muscle tension.
